Gingerbread Men Recipe

There's just something about the holiday season that makes me crave gingerbread men.  I'm not even really sure why, because the only "gingerbread" I remember having around when I was growing up were cinnamon ornaments shaped like gingerbread men that we were not supposed to eat.  To be honest, I probably shouldn't have tried eating them, because I'm quite certain looking back, they were not edible.  Anyway, I thought that this would be the perfect time of the year to share with you a nice and easy gingerbread recipe!


Ingredients
  • 3 cups flour
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 3/4 cup butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 1 egg
  • 1 tsp vanilla


Mix flour, ginger, cinnamon, baking soda, nutmeg, and salt in a large bowl.  Beat together butter and brown sugar in a separate bowl with an electric mixer on medium speed until light and fluffy.  Add the molasses, egg, and vanilla, mixing well.  Gradually beat in the flour mixture on low speed until well mixed.  Press the dough into a thick, flat disk.  Wrap in plastic wrap and refrigerate for at least 4 hours.

Preheat oven to 350°F.  Roll out the dough to 1/4 inch thickness on a lightly floured work surface.  Cut into shapes with cookie cutter and place 1" apart on ungreased baking sheets.

Bake cookies for 8 to 10 minutes or until edges of cookies are set and just begin to brown.  Cool on baking sheets for 1 to 2 minutes then remove to wire racks.  Cool completely.  Store cookies in airtight containers for up to 5 days.
